Maui Taro Tacos (Makes four
large tacos)
1 TBS. Olive Oil
2 Maui Taro Burgers
1 Small Onion, chopped
1 Clove Garlic, minced
1 Small Can Tomato Sauce
1/2 Tsp. Cumin
1/2 Tsp. Chili Powder
1/4 Tsp. Garlic Powder
1/4 Tsp. Salt
1/4 Tsp. Pepper
Dash of Tabasco or Cayenne Pepper, if desired
4 Pre-cooked Taco Shells
Grated Monterey Cheese
Diced Tomatoes
Shredded Lettuce
1. Sauté Maui Taro Burgers, garlic and onion in olive oil
until crumbled and browned.
2. Add tomato sauce and spices.
3. Cook until bubbling.
4. Fill taco shells with Maui Taro Taco mixture.
5. Top with cheese, lettuce and tomatoes.
Serve with side of refried black beans and Spanish rice.

Taro
Burger PuPu (Makes sixteen)
2 Maui Taro Burgers
5 Sheets Filo Dough
Butter Sub.
Sweet Chili Sauce
Dry Roasted Peanuts, chopped fine
Cilantro
1. Fry or bake Taro Burgers until crispy on both sides and cut each
patty into eight wedges.
2. Lay out four sheets of Filo Dough and with a pizza cutter, cut dough
into sixteen three-inch squares.
3. Melt a small bowl of Butter
4. Separate four squares of Filo Dough, dab butter on each one, then
place squares back together like a star.
5. Place one Taro Burger wedge in center of star, then fold dough around
patty wedge like a cup. (May need to brush on more butter to make it
stick.)
6. Bake for ten minutes or until dough is toasty brown.
Drizzle with Sweet Chili sauce, sprinkle with chopped Peanuts, Cilantro
and serve.

Parmesan (Serves four)
4 Maui Taro Burgers
1 Italian Eggplant sliced into 1/4-inch rounds, pre-fried in olive oil
Marinara sauce
Parmesan Cheese Sub., grated
Mozzarella Cheese Sub., grated
1. Preheat oven to 350 degrees.
2. Arrange Taro Burgers on lightly oiled baking pan.
3. Sprinkle generously with Parmesan and Mozzarella Cheese.
4. Place one slice of eggplant on top of each Taro Burger.
5. Sprinkle generously with Parmesan and Mozzarella Cheese.
6. Top with Marinara Sauce.
7. Sprinkle generously with Parmesan and Mozzarella Cheese.
8. Bake for 25 minutes until melted.

Wrap (Makes one)
Maui Taro Burger
Corn
Shredded Soy Cheese
Tomato
Lettuce, Clover or Alfalfa Sprouts
Tortilla Wrap
Salsa or Vinaigrette
1. Fry Taro Burger until crispy.
2. Crumble approximately half onto the Wrap.
3. Add Cheese, Tomato, Corn, shredded Lettuce, Clover or Alfalfa Sprouts.
4. Add Salsa or Vinaigrette and serve.

Taro
Stir Fry (Serves three)
2 Maui Taro Burgers
2 Stalks Celery, julienne
1 Large Carrot, julienne
1/2 Large Onion, diced
Oyster Sauce to taste (optional)
1/8-c Teriyaki sauce (home-made or store-bought)
1/2-c Tofu, firm (optional), dice into 1/4-inch cubes and browned in
oil
Sesame Seeds
1 Fry Taro Burgers until crispy on both sides and crumble.
2 In a separate pan, sauté celery, carrot, onions on high heat
until browned.
3 Add Teri Sauce, Tofu and Sesame Seeds to vegetables.
4 Top with crumbled Tofu Burger.
5 Garnish with Sesame Seeds.
Serve with hot rice.

Teri (Makes one)
Sesame Buns
Maui Taro Burger
Teriyaki Sauce (See below)
Cornstarch
Mayonnaise Sub.
Sauerkraut
1. Bring 1/-cup favorite Teriyaki Sauce to a boil. (Add dried chili
pepper and Sesame Seeds to taste.)
2. Add a mixture of 1 tsp. Cornstarch and 1/4-cup of water to the sauce.
3. Fry Taro Burger until crispy.
4. Place on toasted Sesame Bun.
5. Spread Teri Sauce on bun to taste.
6. Add Mayonnaise Sub. and serve.
