Hawai'i today struggles to balance modernization and development with its agricultural legacy. Taro has been a source of nutrition and a symbol of culture to the Hawaiians for centuries. The generations who have thrived here before us have honored and protected the healthy balance of this eco-system to the benefit of those who have followed. We inherit that responsibility on behalf of the future generations, residents and visitors of the Hawai'ian Islands.

In 1997, our founder and president, Robert Mitnick, began creating a healthy version of a tasty, local Hawaiian dish that consisted of taro, cream, milk, butter and sugar. Robert wanted to produce a food which was a wholesome alternative to the various soy products on the market while still using local, Hawai'i-grown produce as its staple ingredients. What followed was the development of the Maui Taro Burger and the birth of the Hawaii Taro Company.
Since those simple beginnings, Hawai'i Taro Company has evolved into a fully certified manufacturing facility. Today the Maui Taro Burger and related products are sold throughout the state of Hawai'i.

Taro took root in Hawai'i with the arrival of the Polynesian culture and along with fish and coconut, has been a nutritious staple diet in the Islands for over a thousand years. It has inspired both war and celebration among Hawai'ian monarchs. The heart shaped leaves, (lu'au) lend their name to the traditional Hawai'ian Lu'au feast.

The ancient Hawai'ians regarded the whole plant with reverence. If the 'aina, the growing land, is cared for properly, it will provide food for generations to come.

Taro can be grown as wetland in a series of ponds called lo'i or as dryland in upland areas where watering is supplied by rainfall or supplemental irrigation. All of the plant is edible and consists of lu'au leaves (also called callaloo and patra leaves), the stem, and the root (corm).

Maui Taro Burger ~ we use the entire plant – root, stalk and leaves. Our special processing delivers a delicious patty with great taste and texture. The purple color in our variety comes from the same substance that gives red wine its color and anti-oxidant properties. Our taro includes the following nutritional benefits:

Cooking Instructions & Recipes

On Skillet or Flat Top ~Pre-heat to medium hot (approx. 375º F) with a small amount of oil. Cook frozen patty 4½ to 5½ minutes on each side until crispy.
On Barbecue Grill ~Medium to high heat, brush or spray small amount of oil on each side. Cook frozen patty 5 to 6 minutes on each side until crispy.
In Oven or Toaster Oven ~Pre-heat to 500º F. Brush or spray small amount of oil on each side. Place patties on sheet pan and bake frozen patty for 8 to 10 minutes on 1st side until crispy and 6 to 8 minutes on the other side until crispy.
In Pop-up Toaster ~Place frozen patties in toaster, toast 2-3 times or until is comes out crispy.

Taro Burger PuPu (Makes sixteen)

2 Maui Taro Burgers
5 Sheets Filo Dough
Butter Sub.
Sweet Chili Sauce
Dry Roasted Peanuts, chopped fine Cilantro
1. Fry or bake Taro Burgers until crispy on both sides and cut each patty into eight wedges.
2. Lay out four sheets of Filo Dough and with a pizza cutter, cut dough into sixteen three-inch squares.
3. Melt a small bowl of Butter
4. Separate four squares of Filo Dough, dab butter on each one, then place squares back together like a star.
5. Place one Taro Burger wedge in center of star, then fold dough around patty wedge like a cup. (May need to brush on more butter to make it stick.)
6. Bake for ten minutes or until dough is toasty brown.
Drizzle with Sweet Chili sauce, sprinkle with chopped Peanuts, Cilantro and serve.

Cynthia's Maui Taro Tacos (Makes four large tacos)

1 TBS. Olive Oil
2 Maui Taro Burgers
1 Small Onion, chopped
1 Clove Garlic, minced
1 Small Can Tomato Sauce
1/2 Tsp. Cumin
1/2 Tsp. Chili Powder
1/4 Tsp. Garlic Powder
1/4 Tsp. Salt
1/4 Tsp. Pepper
Dash of Tabasco or Cayenne Pepper, if desired
4 Pre-cooked Taco Shells
Grated Monterey Cheese
Diced Tomatoes
Shredded Lettuce
1. Sauté Maui Taro Burgers, garlic and onion in olive oil until crumbled and browned.
2. Add tomato sauce and spices.
3. Cook until bubbling.
4. Fill taco shells with Maui Taro Taco mixture.
5. Top with cheese, lettuce and tomatoes.
Serve with side of refried black beans and Spanish rice.

Taro Parmesan (Serves four)

4 Maui Taro Burgers
1 Italian Eggplant sliced into 1/4-inch rounds, pre-fried in olive oil
Marinara sauce
Parmesan Cheese Sub., grated
Mozzarella Cheese Sub., grated
1. Preheat oven to 350 degrees.
2. Arrange Taro Burgers on lightly oiled baking pan.
3. Sprinkle generously with Parmesan and Mozzarella Cheese.
4. Place one slice of eggplant on top of each Taro Burger.
5. Sprinkle generously with Parmesan and Mozzarella Cheese.
6. Top with Marinara Sauce.
7. Sprinkle generously with Parmesan and Mozzarella Cheese.
8. Bake for 25 minutes until melted.
